The Rattlesnake Hatch green chile was developed to be very hot and very delicious. Its Scoville Units are reported to reach up to 18,000, which is not really very hot in the grand scheme of things. Our crop of Rattlesnakes was very flavorful with a low level of heat. Customers tell us that it reminded them of the green salsa served in Mexican restaurants. Since peppers can vary wildly from seed to seed, this batch was definitely not what we expected in heat but delivers in flavor.
