Our second most popular hot sauce, the Datil is sweet-hot pepper and a culinary symbol of America's oldest city, Saint Augustine, Florida. These fiery morsels with a hint of sweetness can be found across the food scene in St. Augustine, sold fresh at farmers markets and made into jams and other condiments. You’ll even find these peppers, nearly as hot as habaneros, covered in chocolate and served for dessert!

 

Some attribute their origin to the island of Minorca, saying early immigrants brought them over. Others suggest that the datil pepper shares similarities with an African pepper called a Fatalii, and therefore was brought to America by the African slave trade. However they arrived here, they make a VERY tasty hot sauce.

 

A datil pepper is similar in its heat index to a habanero, hitting at around 100,000 to 300,000 on the Scoville scale. But unlike habaneros, datil peppers are sweet, with a fruitful tangy taste to them.

 

Made with peppers, fruit and spices, this hot sauce has a wonderful flavor profile and is not your typical vinegar-based sauce. The peppers for each sauce are fermented for up to 3 weeks to bring out the peak flavor of the pepper and mellow them just slightly.

 

The sauces are shelf stable at room temperature until opened. Then they are stable in the refrigerator until you finish the bottle!
